Spicy Dilly Beans Recipe
If you are growing green beans then making something more exciting than blanching and freezing them or pressure canning them (yuk!) can help make your homestead pantry a little more exciting!
Spicy dilly beans are great as a sandwich side, paired with cheese or a slice of pork pie or just straight out of the jar as a snack. We go through these crisp pickles faster than cucumber pickles on our homestead!
To make farmhouse style spicy dilly beans you will need:
- 4 lbs fresh tender green or yellow beans (about 5 to 6 inches long)
- 8 to 16 heads fresh dill or a large handful of fresh dill leaves
- 8 cloves garlic, peeled
- 1/2 cup canning or pickling salt
- 4 cups of white vinegar (5 % acidity)
- 4 cups of water
- 8 habanero peppers
This recipe makes about 8 pints.
How to make spicy dilly beans

Step 1
Thoroughly clean your canning jars then sterilize them by boiling them empty in a water bath canner for 10 minutes. Simmer your lids to sterilize them in a small saucepan or in the canner. Check the manufacturer’s directions, some need boiling!
Step 2
Combine salt, vinegar, and water into a saucepan. Bring the mixture to a boil.
Step 3
Wash and trim ends from beans and cut to about 4 inches in length so the beans fit inside the pint jars.
Step 4
In each sterile pint jar, add a clove of peeled garlic and a habanero in each jar.
Step 5
Place whole beans upright in jars, leaving 1/2-inch headspace.
Trim beans to ensure a proper fit in the jars if you need to. Add a

Add the hot vinegar brine to the jars full of beans, leaving 1/2-inch headspace.
Step 7
Remove air bubbles from the jars and add more brine if needed to make the headspace 1/2 inch.
Step 8
Wipe jar rims to remove particles of food with a damp paper towel or clean cloth. Place hot, sterilized lids onto jars and screw on bands.
Step 9
Place jars into the water bath canner rack and lower into hot water. Ensure there is at least 1 inch of water over the top of the jars in the water bath canner.
Step 10
Bring the water in the canner back up to boiling then start your timer for the canning processing time depending on your altitude.
- 0 – 1000 ft above sea level – process pints for 5 minutes
- 1001 – 6000 ft above sea level – process pints for 10 minutes
- Above 6000 ft – process pints for 15 minutes
Step 11
Remove jars from canner and leave on a stable work surface to cool completely and to ensure proper sealing of the jars.
Step 12
When cool, label jars and move to somewhere cool and dry. Let the flavors mingle for at least 2 weeks before eating.

Not a fan of habanero peppers? Try jalapeno or Thai peppers for mild heat or use Lemon Drop peppers for a citrusy-hot zing in your pickled beans instead.
