Best Homemade Canned Tomatoes Recipes

I don’t know about you, but I think that a fresh ripe tomato off the vine at the end of summer is pretty tough to beat.  The flavor is sweet, tangy and oh so good!  I love to grow tomatoes and turn them into luscious canned tomato sauce to use in the winter, spring and early summer of the following year.  And boy do we use a lot of tomato sauce in this house!  In fact we use between 36 and 48 quarts of tomatoes in a year!

…Seriously that is a humongous amount of sauce.   Luckily, this year, the Amish Paste tomatoes are freaking massive.  Check it out:

And the other tomato varieties I’m growing aren’t far behind the size of that beauty either.  I’m sure it’s the compost I’ve been working into the beds  in spring.

The tomatoes plants are now starting to be churning out big ripe tomatoes meaning that the next phase in the homesteader’s year is officially here: Canning Season.  It might start differently for you in your garden but in mine, canning season begins with the cucumbers coming in followed by the green beans then those beautiful tomatoes.  Since we have an abundance of tomatoes and too many to eat fresh and since I hate wasting anything on my homestead; I try to make salsa, soup, crushed tomatoes and pasta sauce to put up to use over the coming months until the tomatoes are ripe and the cycle starts again.

I prefer to keep the ingredients simple in my tomato sauce which I use for pasta, pizza, chili and so much more.  I love to roast up my tomatoes with fresh herbs from the garden, shallots and onions and home grown garlic.  Then push the roasted mixture of vegetables through a food mill then season with salt and pepper and reduce the sauce down in a large saucepan until the consistency is what we like.  The sauce is split into sterilized canning jars, and processed in the pressure canner.

Fuel your tomato canning creativity with the best homemade canned tomatoes recipes to try or to inspire you to turn your hard work in the garden into some of the best canned tomatoes you will have ever tried.  Be sure to stock up on mason jars so you don’t get caught short when you are right at crucial stages during the canning!

I may have gotten carried away with the Easy Ferme I may have gotten carried away with the Easy Fermenter. Means I can make delicious fermented foods easily on an evening after work.

A gallon of my spicy kimchi using last year's dried pepper harvest, 1/2 gallon of pickles and soon some lemon dill sauerkraut followed by spicy fermented green beans.

The rampant raspberries have been churning out so The rampant raspberries have been churning out so many berries!

The 1/4 acre of untamed raspberries that I've been picking over the last couple of weeks have resulted in a couple of gallons of berries in the freezer, 8 8oz jars of jam and several pints of fresh eating for us and the neighbors not to mention those eaten whilst picking 😄

Now it's time to leave what's left for the birds who will help keep the pests in check. What seems a mess in the yard can be a haven for pollinators and your garden pest police.
