Best Homemade Canned Tomatoes Recipes
I don’t know about you, but I think that a fresh ripe tomato off the vine at the end of summer is pretty tough to beat. The flavor is sweet, tangy and oh so good! I love to grow tomatoes and turn them into luscious canned tomato sauce to use in the winter, spring and early summer of the following year. And boy do we use a lot of tomato sauce in this house! In fact we use between 36 and 48 quarts of tomatoes in a year!
…Seriously that is a humongous amount of sauce. Luckily, this year, the Amish Paste tomatoes are freaking massive. Check it out:
And the other tomato varieties I’m growing aren’t far behind the size of that beauty either. I’m sure it’s the compost I’ve been working into the beds in spring.
The tomatoes plants are now starting to be churning out big ripe tomatoes meaning that the next phase in the homesteader’s year is officially here: Canning Season. It might start differently for you in your garden but in mine, canning season begins with the cucumbers coming in followed by the green beans then those beautiful tomatoes. Since we have an abundance of tomatoes and too many to eat fresh and since I hate wasting anything on my homestead; I try to make salsa, soup, crushed tomatoes and pasta sauce to put up to use over the coming months until the tomatoes are ripe and the cycle starts again.
I prefer to keep the ingredients simple in my tomato sauce which I use for pasta, pizza, chili and so much more. I love to roast up my tomatoes with fresh herbs from the garden, shallots and onions and home grown garlic. Then push the roasted mixture of vegetables through a food mill then season with salt and pepper and reduce the sauce down in a large saucepan until the consistency is what we like. The sauce is split into sterilized canning jars, and processed in the pressure canner.
